Local and/or "custom" languages
Include the option to enter your own language name, for less popular languages that don't show up in the drop-down menu, that you will be supporting with your own team of translators.

I'd also suggest to composable locales of language, region and variant (like Java). The variant is useful e.g. for domain-specific language which might be different from common usage.
